I did these mint chocolate cupcakes the other day and I was a success at the home. I’m so proud of me also because generally my frosting is not good and beautiful with these awesome cupcakes, I managed for my first time ever my best cupcakes frosting. These cupcakes are so delicious, perfect for a little refresh on hot days!
This recipe is for 12 cupcakes.
120g Chocolate Bar (dark chocolate).
110g Butter – softened.
2 Eggs – at room temperature.
1 Teaspoon Vanilla extract.
32g Cacao Powder.
1/2 Teaspoon Baking Powder.
1/4 Teaspoon Salt.
1/2 Teaspoon Mint extract.
400g Cream Cheese – at room temperature.
150g Icing Sugar.
1 Tsp Vanilla extract.
1 and 1/2 Tsp Mint extract.
Preheat oven at 215°C. Take cupcakes liners and place them in the cupcakes pan. Let set aside.
Coarsely cut in pieces the Chocolate in a medium bowl with Butter. Place it and microwave during 40 second. Take out of microwave and whisking the two together until smooth.
Add Sugar, eggs, Vanilla and Philadelphia until all well mixed. Set aside.
Take a small bowl, whisk Flour, Cacao Powder, Baking Powder and salt together.
Transfer the small bowl inside the medium and whisk all together. Add mint extract.
Take a tablespoon and add each time two spoons of mixture inside each cupcakes liner.
Bake the cupcakes 5 minutes at 215°C, follow by let the muffins in the oven, reduce the temperature at 180°C and bake again 16 minutes.
Let cool on the counter before apply the frosting.
Mix cream cheese, sugar and vanilla extract together until smooth.
Add mint extract.
Let in refrigerator before using.
Decorate with frosting.
